Huerta takes the idea of a garden-to-glass cocktail bar unusually literally. More than a hundred varieties of plants and vegetables contribute to a programme built around freshly harvested herbs and produce, while the kitchen follows the same concern with provenance and seasonality. The connection between growing, cooking and bartending gives the bar a clear identity beyond individual drinks.
