Inspired by Vincent van Gogh, The Absent Ear turns the hidden-bar format into something deliberately surreal. Art, colour and playful details fill the intimate Merchant City space, while the cocktails use the artist and his work as creative starting points rather than simply decorative references. It is immersive and theatrical, but still grounded in the fundamentals of a serious cocktail bar.
