Gen Yamamoto needs very little: eight seats, seasonal Japanese produce, fine spirits and the bartender himself. Guests choose the length of an omakase sequence and receive small cocktails built around fruits and vegetables at their peak. The pace and minimal room have more in common with a Japanese tasting counter than a conventional night out.
