In Amsterdam’s former excise house, Taxman Cocktail Room approaches the drinks menu like a study in flavour. Latvian bartenders Vitaly Alekseyev and Sergej Platonov have replaced the usual branded backbar with their own bottles, directing attention to what goes into each drink. A long shared counter makes the making part of the evening: the banana-led Sugar and savoury, kimchi-spiked Salt show how far a restrained cocktail list can travel.
