Panda & Sons develops cocktails through research into freezing and sub-zero flavour techniques. Its Transcend menu grew from work by Iain McPherson, Nicky Craig and the team in their Brain Melting Society research space. Four chapters explore Switching, Sous Pression, freeze drying and cryo concentration.
