Jay Khan created Coa to deepen Hong Kong’s understanding of agave spirits. Mezcal and tequila lead, supported by Mexican ingredients and flavours in precise, expressive drinks. The room remains intentionally informal, so much of the education happens almost incidentally over a glass.
