Onda is deliberately small: just 14 indoor seats and a husband-and-wife team behind the experience. Peter O’Connor and Joana Jaeger combine deep drinks knowledge with highly personal hospitality, using a Flavour Discovery approach to guide guests through cocktails rather than simply presenting a conventional list. It feels closer to being hosted in someone’s private cocktail room than visiting a large-format bar.
