Salmon Guru is exuberant on purpose. Diego Cabrera’s Madrid bar fills several visually distinct rooms with comic-book graphics, neon and bold glassware, then gives the cocktails enough technical substance to keep up. Spectacle is not a guilty pleasure here; it is part of the language.
