Mace

Mace takes spices as its creative vocabulary. Founded by bartender Nico de Soto and Greg Boehm, the bar explores ingredients from around the world through cocktails built around aromatics, botanicals and spice combinations. The concept is easy to understand but remarkably broad in execution, allowing familiar drinks to take on entirely different personalities through scent and flavour.
